Raw Carrot Cake with Cashew Cream Frosting

This wonderful little cake is great for sharing or keeping for yourself!  It’s dense, rich and full of flavour. The base is made from carrots, buckwheat flour, dates, dried pineapple, dried coconut and cinnamon. The fantastic frosting is made from cashews, lemon juice, coconut oil and maple syrup. Decorated with walnuts, pistachios and goji berries.  Will keep happily in the fridge for a week, or freezes well. Yum yum.
